Ingredients
- 4 Boneless, skinless chicken breasts
- 1 Cajun seasoning
- 1 All-purpose flour
- 1 Olive oil
- 1 Vegetables green bell pepper, celery, Bay leaves, thyme, oregano, garlic
- 1 Chicken broth/stock Worcestershire sauce, Half and half
- 1 Rice
Instructions
- Season chicken all over with Cajun seasoning blend
- Dredge chicken lightly in flour mixture
- Heat 1-2 Tbsp oil in a skillet over medium-high heat
- Pan fry chicken about 2-3 minutes per side until golden brown
- Transfer chicken to a plate and set aside
- Sauté onions, celery, bell pepper for 4-5 minutes
- Add minced garlic and stir 1 minute more
- Whisk in flour to make a roux and cook 1-2 minutes
- Stir in chicken broth and tomatoes, scraping browned bits
- Add Worcestershire sauce, half and half, herbs and season
- Simmer 15-20 minutes with lid ajar until chicken is cooked through
- Serve smothered chicken over white rice
