Ingredients
  

  • 4 Boneless, skinless chicken breasts
  • 1 Cajun seasoning 
  • 1 All-purpose flour
  • 1 Olive oil
  • 1 Vegetables green bell pepper, celery, Bay leaves, thyme, oregano, garlic
  • 1 Chicken broth/stock Worcestershire sauce, Half and half
  • 1 Rice

Instructions
 

  • Season chicken all over with Cajun seasoning blend
  • Dredge chicken lightly in flour mixture
  • Heat 1-2 Tbsp oil in a skillet over medium-high heat
  • Pan fry chicken about 2-3 minutes per side until golden brown
  • Transfer chicken to a plate and set aside
  • Sauté onions, celery, bell pepper for 4-5 minutes
  • Add minced garlic and stir 1 minute more
  • Whisk in flour to make a roux and cook 1-2 minutes
  • Stir in chicken broth and tomatoes, scraping browned bits
  • Add Worcestershire sauce, half and half, herbs and season
  • Simmer 15-20 minutes with lid ajar until chicken is cooked through
  • Serve smothered chicken over white rice
